Japanese sushi chain sets Guinness record with 71-store tuna-filleting show

Japan’s Choshi Maru, a major gourmet conveyor-belt sushi operator, has achieved a Guinness World Record for the “largest simultaneous performance of tuna filleting show (multiple locations)” after conducting coordinated demonstrations across 71 outlets on Nov. 1, the company announced. The certificate was presented at the chain’s Hikarinooka store in Tokyo after Guinness adjudicators confirmed all participating sites followed the required procedures, surpassing the minimum threshold of 60. The record attempt builds on more than two decades of tuna-cutting shows that Choshi Maru stages to highlight artisanal skills and the cultural importance of whole-fish utilization in Japan’s sushi sector, according to the company. Over 200 community volunteers served as official witnesses, verifying each store’s performance through documentation, video submissions and onsite checks. Choshi Maru said the achievement reflects its long-standing model of having trained sushi chefs fillet fish, prepare toppings and hand-form sushi at every location, rather than relying on centralized processing. The company aims to use the recognition to further promote its theatrical “stage” concept — casting restaurants as performance venues and employees as “troupe members” — while strengthening efforts to pass traditional techniques to younger generations. The chain also emphasized the educational role of its tuna-filleting events, which are intended to convey respect for marine resources and introduce children to Japan’s seafood culture. Choshi Maru, which operates 92 directly managed stores across the greater Tokyo region as of Nov. 1, said it will continue expanding both its cultural outreach and its presence domestically and overseas, the company said.
